Javier Flores - Fat Ice
Entrepreneur + Bar Veteran + Hielo Jefe
Javier Roberto Flores is a bartender from Texas who has been in the industry since 2001. During years of travel all over the nation and working with the best operators and mixologists, he noticed a pattern: they were all using Clinebell ice. Knowing this could be a game changer in South Texas’ budding cocktail scene, he started cutting Clinebell ice into craft cocktail cubes for South Texas establishments in 2011. By 2012, he was cutting craft ice for 300 cocktails a night.
In 2013, Javier moved to Austin, Texas to further his craft and joined the team at Midnight Cowboy. At that time, there were only 2 bars in Austin using Clinebell ice; Javier saw an opportunity, and Fat Ice was born.
Fast forward a few years, and Javier and his team are on track to be the largest producer of craft ice in the country. Fat Ice is currently sold at Spec's Fine Wine and Spirits and offers nationwide shipping.
